Denise's Summer Sandwich

This recipe is from another friend at work. This sandwich is to die for...perfect football snack.

  • A french or sourdough baguette

  • ¼ cup Olive Oil

  • ¼ cup Balsamic Vinegar

  • 1 lb. Thinly sliced pastrami

  • ¼ lb. Sliced Provolone or Mozzarella Cheese

  • 2 or 3 Sliced Roma tomatoes

  • 1 bunch Fresh Basil

  • Salt Pepper

  • Foil

  • Slice bread in half, make a trough by taking out some the middle of the bread.

  • Wisk together oil and vinegar till blended thoroughly.

  • Spoon this mixture onto both sides of bread.

  • Layer pastrami a couple of meat thicknesses on each side, then the cheese, basil and tomatoes on the other side. Only Salt and pepper tomatoes (the pastrami and cheese are already seasoned), dribble a little more balsamic onto sandwich prior to putting the other half together. Wrap sandwich with foil. Put in 350° oven, or use BBQ for about 11-15 minutes, till bread is a little crispy cheese is melting and basil is not too dark.

  • Use extra vinegar/oil mixture for dipping.

notes:

You need to get a good quality pastrami to really do this recipe justice. You can get good pastrami at most grocery store deli counters.
