Mashed Red Potato Casserole

From Craig & Tina Roush and Avis Zody

  • 6-8 Medium-large unpeeled red potatoes

  • 1 C chunked Velveeta cheese

  • 1 C miracle whip (or mayonaise)

  • 1-2 bunches chopped green onions

  • ½-1 package cooked bacon

  • (All ingredients can be altered to taste!)

  • Cook and drain the unpeeled potatoes as for mashed potatoes. Salt lightly while cooking. Add rest of ingredients, and stir until potatoes are somewhat mashed, yet still with chunks. Place into greased casserold dish. Save some bacon out for topping, and bake at 350 degrees until rises slightly. (Usually 15-20 min)
