Sausage, Potato and 3 Cheese Frittata

Frittatas are a delicious and filling breakfast that can be made with almost any ingredients but this one is my favorite. And it’s so easy to make!

  • Place the cubed potatoes in a pot and cover with water. Bring to a boil and remove from heat. Drain and set aside.

  • Cook the sausages according to the directions on the package. Dice.

  • Preheat the oven to 350 degrees.

  • Whisk together the eggs, milk, salt and pepper. Set aside.

  • In a cast iron skillet, melt butter and saute onion, garlic and bell pepper for 2 minutes. Add tomato and herbs and cook for another minute. Add sausages and potatoes. Cook another minute.

  • Pour the eggs over the vegetables and sausages and lightly move the ingredients around so they are evenly spread out. Drop dollops of goat cheese evenly around the pan.

  • When the eggs being to set in the skillet, transfer the whole thing to the oven and bake for 10 minutes.

  • Remove from the oven and top with cheddar and parmesan cheese.

  • Bake for 5-10 more minutes or until the cheese is melted and the eggs and completely cooked through. Place under the broiler if you like the cheese to be browned and crispy.

  • Cut into pie slices and serve.
