Sausage, Potato and 3 Cheese Frittata
Frittatas are a delicious and filling breakfast that can be made with almost any ingredients but this one is my favorite. And it’s so easy to make!
6 eggs
½ c. milk
salt and pepper to taste
½ red bell pepper, diced
1 plum tomato, diced
½ onion, diced
1 clove of garlic, minced
2 tbsp. butter
3 tbsp. chopped fresh herbs such as basil, oregano, parsley and chives
1 box of frozen breakfast sausages
2 potatoes, diced into very small cubes
2 oz. goat cheese
1 c. shredded cheddar cheese
½ c. parmesan or asiago cheese
Place the cubed potatoes in a pot and cover with water. Bring to a boil and remove from heat. Drain and set aside.
Cook the sausages according to the directions on the package. Dice.
Preheat the oven to 350 degrees.
Whisk together the eggs, milk, salt and pepper. Set aside.
In a cast iron skillet, melt butter and saute onion, garlic and bell pepper for 2 minutes. Add tomato and herbs and cook for another minute. Add sausages and potatoes. Cook another minute.
Pour the eggs over the vegetables and sausages and lightly move the ingredients around so they are evenly spread out. Drop dollops of goat cheese evenly around the pan.
When the eggs being to set in the skillet, transfer the whole thing to the oven and bake for 10 minutes.
Remove from the oven and top with cheddar and parmesan cheese.
Bake for 5-10 more minutes or until the cheese is melted and the eggs and completely cooked through. Place under the broiler if you like the cheese to be browned and crispy.
Cut into pie slices and serve.
