Beans and Rice with Avocado
The heartiness of the beans and rice combine with the fresh flavors of cilantro and avocado in this delicious and healthy recipe.
ingredients
- 1 can refried beans
- 1 cup freshly chopped cilantro
- 1 ripe avocado, sliced
- 1/4 cup sharp cheddar cheese
- 1 tsp cumin
- 2/3 cup salsa
- 1 green bell pepper, chopped
- 1 medium onion, chopped
- 1 cup frozen or fresh corn
- 2 cups cooked rice (Jasmine adds wonderful fragrance)
directions
Combine refried beans, 1/2 cup salsa, cheese, and cumin in a medium saucepan over low to medium heat, stirring occasionally until cheese melts. Spray a medium sauté pan with nonstick cooking spray and sauté the onion and green pepper. Add the corn and remaining 1/3 cup salsa to the pepper and onion mixture and cook until heated through. To serve, layer rice, then bean mixture, followed by corn mixture. Top with fresh avocado and cilantro.
