Pomodori Al Forno
This is a delicious roasted tomato appetizer for the height of tomato season!
Preheat oven to 250 degrees. Pour ½ cup olive oil into 13x9x2 in glass or ceramic baking dish. Arrange tomatoes in dish cut side up. Drizzle with remaining olive oil. Sprinkle oregano, sugar and salt. Bake 1 hour. Using tongs flip tomatoes over. Bake 1 hour longer. Turn tomatoes over again. Bake until they are very deep red and tender (another 20 -45 mins). Layer tomatoes in medium bowl sprinkling garlic and parsley over each layer. Reserve oil in dish. Drizzle tomatoes with reserved oil in baking dish. Let stand at room temperature 2 hours. Serve with goat cheese and toasted baguette slices.
