Fluffy Mashed Potatoes

ingredients

  • 5 lbs. potatoes (about 9)
  • 6 oz. cream cheese
  • 1 c. sour cream
  • onion powder
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 T. butter

    Cook peeled potatoes in boiling water until tender. Drain and mash with cream cheese and sour cream until smooth. (I use electric mixer.) Add the remaining ingredients and beat until light and fluffy.

    Bake uncovered at 350° for 35 minutes. These can be made the night before and refrigerated, then bake when you need them.
