Italian Sausage and Peppers w/ Red Sauce
Don’t let the list of ingredients scare you--this is an easy, pantry-and-fridge dinner you can throw together quick.

- 1 Package Smoked Sausage or Kielbasa (Recommended: Smithfield)
- 2 Green Bell Peppers
- 1 Large Vidalia Onion
- Olive Oil
- Salt and Freshly Ground Pepper
- One Can Diced Tomatoes
- 2 1/2 Cups Pre-made Jarred Marinara Sauce
- 2 garlic cloves, minced
- 1 Small Vidalia Onion, Chopped
- 1/4 Teaspoon Nutmeg
- 1/4 Cup Medium Red Wine, such as Pinot Noir
- 1 1/2 Tablespoons Worcestershire Sauce
- 1 Teaspoon Sugar, to taste
- Salt and Freshly Ground Pepper

For the sauce: Heat 1 tablespoon of olive oil in large sauce pan over medium high heat. Place garlic and onions in pan and sauté until fragrant, about 2 minutes. Add nutmeg. Add tomatoes and worcestershire sauce, leting cook for about 2 minutes. Add marinara sauce and sugar letting the sauce come up to a slow simmer. Adjust the seasonings with salt and pepper to taste, and add the red wine. Let simmer on low for 20 minutes for the flavors to marry, stirring occasionally. Turn off and set aside for peppers and onions.

While the sauce is cooking, slice peppers and onion in strips and set aside. Slice smoked sausage into 1/2 inch thick slices, and throw into a large frying pan on medium high heat, browning meat for 3-4 minutes. Add peppers and onions into pan, adding salt and pepper to taste, sautéeing for 5-6 minutes or until vegetables have softened but are still slighty crisp. Serve with red sauce atop.
notes
You can use sweet italian saugage in place of smoked sausage, but be sure to remove casing before cooking.
