Spaghetti alla Carbonara
ingredients
- 8 ounces spaghetti pasta
- 1 tablespoons olive oil
- 2 cloves of garlic
- 1/2 medium onion, chopped
- 4 ounces pancetta
- 1/4 cup dry white wine
- 1/2 cup Parmesan cheese
- salt/pepper

Cook pasta al dente.

Heat half of oil and add garlic and onion in skillet until brown. Add pancetta until brown. Add wine and simmer for 2-3 minutes.

Drain pasta and toss with half of oil. Transfer to bowl and add pancetta-wine mix. Toss to coat evenly and serve.
notes
Pancetta can be substituted with chicken or sausage.
