Spanish Rice
ingredients
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1 clove garlic, minced
- 1 tablespoon cooking oil
- 1 (28 oz) can tomatoes, chopped
- 3/4 cup long grain rice
- 1 teaspoon sugar
- 1 teaspoon chili powder
- 2 dashes hot pepper sauce
- 1/8 teaspoon black pepper
- 1 cup water
- 1/2 cup shredded Cheddar cheese
directions
In a large skillet, cook onion, pepper and garlic in hot oil until tender. Stir in undrained tomatoes, uncooked rice, sugar, chili powder, hot pepper sauce, black pepper and water. Bring to boil; reduce heat. Cover; simmer for 20-25 minutes or til rice is tender and most of water is absorbed. Sprinkle with cheese.
