Ham and Potato Frittata
This is a nice dish to take to a brunch potluck, or to make for hosting brunch.
ingredients
- Preheat oven to 375F
- 2 Tbsp butter
- 1 small onion finely chopped (can be eliminated)
- 2 cups peeled, cooked potatoes cut into 1/2 inch cubes
- 1 sweet red pepper finely diced
- 3/4 cup diced ham
- salt and pepper
- 8 large eggs
- 2 Tbsp milk
- 2 Tbsp finely chopped fresh parsley
- 1 cup shredded cheddar cheese

In a large skillet, melt butter over medium heat. Add onion, potatoes, red pepper, and ham. Cook, stirring often, for 5 min or until vegetables are tender. Reduce heat to medium low.

In a large bowl, beat together eggs with milk and parsley; season with salt and pepper. Pour over potato mixture in skillet. Cook, stirring gently, for about 1 min until eggs start to set. The eggs will appear semi-scrambled. Stir in cheese.

Wrap skillet handle in double layer of foil if it’s not oven-proof. Place in preheated oven for 15-20 min or until eggs are just set in center. Let cool 5 min. Turn out onto large serving plate and cut into wedges.
notes
Make sure your skillet is non-stick or spray it. Cool the frittata before turning it out of the skillet, or else it will break and won't have a nice shape.
