Skillet Pork Chops with Potatoes and Onion
The pork is so moist and flavorful! Great comfort food for the winter. If you want hearty food in the summer and don’t want to grill, it doesn’t heat up your house b/c you make it on the stove!
ingredients
- 4 pork chops (bone in)
- flour
- 2 Tblsp vegetable oil
- 1/3 cup grated parmesan cheese
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 Yukon Gold potatoes, thinly sliced
- 1 large onion, or 2 med onions thinly sliced
- 3 cubes beef bouillon
- 3/4 cup hot water
- 1 Tblsp lemon juice

Heat oil in a medium to large sized skillet. Coat the pork chops with flour on each side and place in the skillet. Brown 4 minutes on each side.

Mix parmesan cheese, salt and pepper in a small bowl. Sprinkle 1/2 of the cheese mixture over the pork chops. Layer chops with the potatoes. Sprinkle with remaining cheese. Top with onion slices.

In a small bowl, dissolve the beef cubes in hot water. Stir in the lemon juice. Pour over the layered pork chops.

Cover skillet and reduce heat to low. Simmer for 40 min until pork has reached internal temp of 160F/70C.
notes
If you're making less than 4 chops, reduce the salt or the number of beef cubes as it can be too salty otherwise. Tastes good with rice or a salad with ginger sesame dressing.
