Pumpkin Oatmeal Cookies
These are perfect cookies for the fall. You can substitute chocolate chips for the raisins.
ingredients
- 4 cups flour
- 2 cups oats, uncooked
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 cups butter or margarine softened
- 2 cups firmly packed brown sugar
- 1 cup sugar
- 1 egg
- 1 tsp. vanilla
- 1 can of pumpkin (16 oz.)
- 1 cup raisins

Preheat oven to 350 degrees.

Combine flour, oats, soda, cinnamon and salt, and set aside.

Cream butter, gradually adding sugars, beating until light and fluffy. Add egg and vanilla, mix well.

Alternate addition of other dry ingredients and pumpkin, mixing well after each addition. Stir in raisins.

Drop onto lightly greased cookie sheet.

Bake 20-25 minutes until cookies are lightly browned.
notes
If stacked for storage the can stick together, so use parchment or waxed paper to separate layers of cookies
