Pumpkin Oatmeal Cookies

These are perfect cookies for the fall. You can substitute chocolate chips for the raisins.

  • Preheat oven to 350 degrees.

  • Combine flour, oats, soda, cinnamon and salt, and set aside.

  • Cream butter, gradually adding sugars, beating until light and fluffy. Add egg and vanilla, mix well.

  • Alternate addition of other dry ingredients and pumpkin, mixing well after each addition. Stir in raisins.

  • Drop onto lightly greased cookie sheet.

  • Bake 20-25 minutes until cookies are lightly browned.

If stacked for storage the can stick together, so use parchment or waxed paper to separate layers of cookies
