Cheese Pennies
The recipe is designed for a food processor and is difficult to mix the ingredients affectively.
ingredients
- 8 ounces cheddar cheese
- 1 cup flour
- 1/2 cup soft butter or margarine
- 1 tsp. dry mustard

In the food processor, put the knife blade in the bottom of the bowl, with the shredding attachment at the top. Shred cheese, remove shredding attachment.

Add remaining ingredients and process until ingredients are mixed and a ball forms (~10-15 seconds).

Preheat oven to 400F.

Roll dough into 1” balls and place 2” apart on ungreased cookie sheet. Flatten slightly to keep in place.

Bake for 12-15 minutes. The bottoms just start to brown when done. Serve warm. (This is never a problem in our house:)

The dough can be mixed ahead to time, rolled into balls, and refrigerated for a day until you are ready to bake them. The recipe is designed for a food processor.
