Zoë acquired this recipe from a friend who attended a cooking school. She’s gotten quite adventurous in her ethnic cooking!

ingredients

  • 1 bunch Parsley leaves
  • 2-3 T. oregano leaves
  • 1/4 c. red wine vinegar
  • 2-4 garlic cloves, peeled and cut in 1/2
  • 1/2 - 1 t. red pepper flakes
  • 1/2 medium lemon, zested
  • 1/4 c. red onion minced (optional)
  • 3/4 - 1 c. olive oil
  • salt and pepper to taste

directions

Stagger layer all ingredients, except oil, into food processor. Process, pour in oil and puree until desired smoothness. Salt and pepper.
