Chimi Churri Sauce

Zoë acquired this recipe from a friend who attended a cooking school. She’s gotten quite adventurous in her ethnic cooking!

  • 1 bunch Parsley leaves

  • 2-3 T. oregano leaves

  • ¼ c. red wine vinegar

  • 2-4 garlic cloves, peeled and cut in ½

  • ½ - 1 t. red pepper flakes

  • ½ medium lemon, zested

  • ¼ c. red onion minced (optional)

  • ¾ - 1 c. olive oil

  • salt and pepper to taste

  • Stagger layer all ingredients, except oil, into food processor. Process, pour in oil and puree until desired smoothness. Salt and pepper.
