This recipe comes from the roadside farm on the way from the San Jose airport to Carmel, CA. It’s Grammy and Grandpa’s favorite place to stock up before arriving at their summer home.

ingredients

  • 4 medium artichokes
  • 1/3 c. olive oil
  • 1/3 c. balsamic vinegar
  • 2 cloves minced garlic
  • 3 sprigs fresh rosemary, OR 3 chopped basil leaves, OR 3 sprigs fresh lavender
  • 1/2 lemon, squeezed
  • salt and pepper

    Prep artichoke:

    Trim stem at base. Cut 1/3 top off artichoke. Trim tips with shears. Stand artichoke in saucepan with 3" water, cover and boil/steam 25-40 minutes, until leaf pulls from center easily. Split lengthwise and remove choke from center of artichoke.

    Marinade:

    Combine above ingredients in a ziplok bag. Place artichoke in marinade cut side down. Close bag and refrigerate, turning often. Marinate overnight.

    Grill:

    Drain artichokes from marinade. Place on hot grill cut side up for 5-7 minutes. Turn over and cook additional 5-7 minutes. Brush with marinade while grilling. Serve hot or at room temperature.
