Lentil Beef Chile
ingredients
- 2 med.(1 cup) chopped onions
- 1/2 lb lean ground beef
- 1 1/2 cups dried lentils
- 3 cups water
- 1 T chili powder
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano leaves
- 1/4 tsp ground red pepper
- 1/4 tsp black pepper
- 1 15 oz can tomato sauce
- 2 T chopped parsley
- 2 oz(1/2 cup) cheddar cheese, shredded
- May add 1/2 tsp cumin

In 3 qt. sauce pan cook onions and ground beef over high heat, stirring constantly, until browned. Drain off fat. Stir in all remaining ingredients except tomato sauce, parsley and cheese. Continue cooking until heated through, about 3-4 minutes. Cover and cook until lentils are tender, about 25-30 minutes. Add tomato sauce. Continue cooking until heated through. Top each serving with parsley and cheese.

You may also add 1 15 oz can kidney beans or black beans if desired.

Ground turkey may be used in place of ground beef.
