Vegan Quesadillas
This version offers a yummy substitute for cheese. I’ve recreated this from a vendor at our local farmer’s market in seattle.
ingredients
- 1 large flour tortilla
- Various greens such as chard, beet, spinach, etc.
- Mild New Mexico chili powder
- pinch of salt and pepper
- Cheese substitute:
- 1 T nutritional yeast
- 2.5 T flour
- water to make a paste

Chop all greens (use the stems too).Start sauteeing the veggies in a little oil. While veggies are cooking mix up the yeast paste.

Put the tortilla in a large skillet. Spread the paste all over it and add sauteed veggies. Fold in half and grill till tortilla is browned. Use a pizza cutter to cut in wedges, top with your favorite salsa/sauce and you are good to go!
