HAWAIIAN BANANA NUT BREAD
A great recipe for making 2 days ahead of serving.
ingredients
- 2 cups flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 (8 1/4 oz) can crushed pineapple undrained.
- 1 cup of mashed banana
- 1/3 cup orange juice or mango nectar
- 1/2 cup butter
- 1 cup sugar
- 2 eggs, beaten
- 1 1/2 cups macadamia nuts or pecans
- 1 cup coconut
directions
Preheat oven to 350 degrees. Butter one lb. loaf pan. Sift dry ingredients together and set aside. Combine pineapple,banana and juice and set aside. In a large bowl, cream butter and sugar. Add eggs and beat well. Add a small amount of the flour mixture alternately with the fruit mixture, mixing only enough to moisten the flour. Stir in nuts and coconut and pour into pan. Bake for 1 hour and 15 min. Cool thoroughly and wrap. This bread tastes best if allowed to sit for a day or so before serving.
