Vegetable Lasagna
ingredients
- 3 zucchinis, thinly sliced
- 1/2 cup fresh mushrooms, sliced
- 1 medium onion, diced
- 1 clove garlic, minced
- 1/2 to 3/4 cup frozen chopped spinach
- 16 ounce jar Ragu Sauce
- 1 pack lasagna noodles, cooked & drained
- 8 ounces ricotta cheese, Or Cottage cheese may be used
- 3/4 tsp. Italian seasoning
- 1 clove garlic, diced fine
- 1 medium green bell pepper, diced

Sauté onions, garlic, zucchini, mushrooms, spinach & seasonings in 2 TBSP. olive oil, until vegetables are tender. Layer noodles, vegetables & 1/2 of the sauce & cheese and repeat, ending with sauce & cheese. Bake in a 350-degree oven for 30 minutes or until bubbly.
