Diana's Hot Chicken Salad
Submitted by Diana Roberts Decker, now hanging out in Palm Desert, golfing and enjoying the sunshine.
ingredients
- 4 cups chicken breast -(4 whole chicken breasts)*
- 2 cups chopped celery
- 4 chopped hard boiled eggs
- 3/4 cup Miracle Whip salad dressing
- 1 can cream of chicken soup
- 1 sm jar chopped pimento drained
- 2T lemon juice
- 1T chopped onions - I use about 1/4 cup
- 1 t salt
- 1t pepper
- Topping:
- 1 1/2 cups crushed potato chips
- 1 cup shredded cheddar cheese
- 2/3 cup slivered almonds

Combine all the above ingredients together and put into a 9 x 13" baking dish sprayed with Pam.

Refrigerate over night and bake at 400 degrees for 30-40 minutes.

I use any left over chicken, dark and/or white.
