Weeknight meal

ingredients

  • 1 tin of tuna - it really doesn’t matter which
  • 1 capsicum
  • greens (eg bok choy, baby spinach)
  • any other vegies you have to hand
  • garlic
  • ginger
  • onion/leek/spring onion
  • Vegetable or peanut oil
  • Soy sauce
  • Sesame oil
  • 1 star anise
  • chicken stock powder
  • enough rice for who’s home!

    Put the rice on, or take out your instant rice sachet like Alex and I do when we are being lazy (the ones you can do for 90 second in the microwave)

    Boil some water and pour into a cup with 1 tsp of stock powder and the star anise.

    Heat up the vegetable oil in a fry pan. Fry the onion, ginger and garlic. Add the capsicum and fry until it’s soft. Add the tuna and heat through. Add the greens and sprinkle over some sesame oil. Pour in the liquid (you can remove the star anise if you want to, or leave it in and play, “Who got the lucky star anise?”).

    Add a dash of soy.

    Serve the sauce on the rice. People can add extra soy if they like.
