Mom's Twice Baked Potatoes

  • Pierce skin of potato with a fork and bake until tender at 350°, about an hour. Cut top off potatoes lengthwise. Scoop out pulp into a bowl. Mash potatoes well and beat in all remaining ingredients except cheese. Spoon into potato shells. Top with cheese. Place filled shells on cookie sheet and heat in oven (350) for about 10-15 min.
