Smoked Salmon Pappardelle
ingredients
- 0.5 lb Uncooked pappardelle/fettuccine
- 1 tsp Butter
- 1.5 cups Sweet onion, diced
- 1 cup Chicken broth
- 4 oz Reduced fat cream cheese, cubed
- 10 oz Peas
- 8 oz Smoked salmon fillet
- 0.5 tsp Dill
- 0.25 tsp Salt
- 0.25 tsp Black pepper

Cook pasta according to package directions. Drain. Keep warm.

Dice onion, cube cream cheese, drain/thaw peas and chop salmon into bite size pieces.

Melt butter in a large nonstick skillet over medium-high heat. Add onion; sauté 4 minutes or until tender. Add broth and cheese; cook 4 minutes or until cheese melts, stirring frequently. Add peas and salmon; cook 3 minutes or until thoroughly heated. Stir in dill, salt, and pepper.

Combine pasta and salmon mixture in a large bowl; toss gently.
