Mimi's Café's French Market Onion Soup
ingredients
- 3 tablespoons butter
- 4 (14-ounce) cans beef broth, undiluted
- 14-ounce can beef consomme, undiluted
- 2 pounds yellow onions, cut into 1/2 inch slices
- salt and freshly ground black pepper to taste
- 6-8 slices French bread, toasted
- 6-8 portions of sliced or grated gruyere, mozzarella, Swiss or Parmesan, or any combination

Melt butter in a heavy-bottomed pot and saute onions on medium-low heat until they soften and turn golden brown. Stir often and adjust the heat if necessary so onions don’t burn.

Add broth; simmer 10 minutes. Season with salt and pepper.

To serve, pour into oven-proof soup crocks. Top with bread and cheese. Broil until the cheese melts. Carefully remove from the oven.
