Twice baked potatoes can be simple or as overstuffed as you like. Use as the starch for your meal, or over stuff them and make them the meal.
2 large baking potatoes
¼ Cup half and half
3 Tablespoons butter
¼ Cup shredded cheddar cheese
Salt & Pepper to taste
Use as many of these toppings as you wish, use about ¼ Cup for each potato half.
crumbled bacon
sour cream
avocado
diced shrimp
green or red pepper diced
red onion diced
pepperoni
Italian Sausage crumbled
chili
salsa
pulled pork or chicken in BBQ sauce
Bake potatoes in hot oven (375) for about 45 minutes or until done.
Slice potatoes in half and scoop out the inside into a medium sized bowl, leaving about a ⅛ inch shell all around.
Mash the potato with the half and half, butter, cheese, and salt & pepper.
Place mashed potato mixture into a pastry bag and pipe filling back into the potato shell.
Place potato halves on a baking sheet and bake in oven for about 10 minutes or until tops of potatoes are brown.
Bake potatoes as above,scoop out insides of potatoes, and mash with the half and half, butter, cheese, salt & pepper, but add any additional toppings into mashed mixture before placing mixture into the pastry bag to pipe into the potato shell. Bake as above. Save some of the additional topping to sprinkle on top of potato just before serving.

TOTAL TIME: 45 min
I always bake extra potatoes if I am turning on the oven anyway. (don't make the potato in the microwave as the shell will not be firm enough to stuff)These can be prepared ahead of time and frozen for use any time you need them.
