Broiled Veal Chop

Broiled lightly seasoned Veal Chop

  • 4 1 inch thick veal chops well trimmed of fat

  • Fresh rosemary

  • salt and pepper

Potato Crowns
  • 2 - 3 Large Russet Potatoes cooked, mashed, and seasoned to taste.

  • 1 large Sweet Potato cooked,mashed, and seasoned to taste.

  • Season veal chops on each side with salt,pepper, and fresh rosemary.

  • Grill or broil about 6 minutes on each side for medium doneness.

  • Serve w/ potato crowns and fresh steamed green beans.

  • To make potato crowns:

  • Place mashed and seasoned potatoes in a pastry bag w/ a decorative tip.

  • Place mashed sweet potato in a second pastry bag with same decorative tip as first bag.

  • Pipe a serving sized mound of potatoes onto a lightly grease baking pan.

  • Pipe a smaller amount of sweet potato on top of white potato in a decorative fashion.

  • Place crowns under broiler for 30 - 45 seconds just to brown top. Transfer to plate w/ veal chop.

  • Serve immediately.

My Dad had this at Suzz wedding. He loves his meat and potatoes. Buy the best cut of veal chop you can so that the meat is not tough. Serve w/ fresh steamed green beans and potato crowns.
