Lemon Chicken Parmesan

I made this for dinner one night, and Joe said, “This has to go in mom’s cookbook. Let’s take a picture of it!” Needless to say we didn’t take a picture, but it is pretty tasty and easy too!

  • 6 large boneless skinless chicken breast halves

  • 5 large garlic cloves, peeled and mashed

  • ½-1 stick of butter ( I like to use a whole stick)

  • ¾ cup sour cream

  • ¾ cup Parmesan cheese

  • paprika

  • lemon wedges

  • Pound the chicken breasts. Heat garlic in butter, cool slightly. Mix half of the butter w/sour cream. Coat each breast generously with sour cream and roll in Parmesan cheese. Place each chicken piece in foil line baking dish, coated w/Parmesan cheese. Sprinkle w/paprika. Bake at 350 uncovered for 25 mins., run under broiler. Squeeze a little lemon juice on the breasts before serving. Serve w/additional lemon wedges.
