Hunter's Chicken
Delicious, hearty chicken dish perfect for a cold winter night. Serve with rice pilaf.
ingredients
- 1 (18 3/4 oz.) can solid-pack tomatoes
- 1 cup chopped onion
- 4 cloves garlic, minced
- 2 bay leaves
- 2 tsp. ground cumin
- 1/2 tsp. fresh oregano, chopped, or 1 1/2 tsp. dried, crumbled
- 2 Tbsp. white wine vinegar
- Salt, pepper
- 2 whole chicken breasts, cut into portions

Combine tomatoes with liquid in large overn-proof casserole dish, breaking tomatoes into bits. Add onion, garlic, bay leaves, cumin, oregano and vinegar. Stir to blend. Season to taste with salt and pepper.

Simmer sauce on top of stove 20 minutes, stirring occasionally. Add chicken pieces, pushing them down into sauce. Cover casserole and bake for about 1 hour.
notes
You can use a whole 3-pound chicken, cut into pieces instead of breasts if preferred.
