Chicken Satays with Peanut Dipping Sauce
This recipe is almost 20 yrs. old, way before the Thai craze! I made it for the first time for when Nancy came to Atlanta to visit.
ingredients
- Satays:
- 1/4 cup soy sauce
- 1/4 cup lemon juice
- 2 tbsp. veg. oil
- 1 tbsp. sugar
- 2 lbs. of skinless, boneless chicken breasts, cut into 1/2 in. cubes
- Peanut Dipping Sauce:
- 2 garlic cloves
- 2 shallots
- 2 tbsp. lime juice
- 1 tbsp. brown sugar
- 1/2 tsp. ground coriander
- 1/4 tsp. crushed red hot pepper, or a dash of hot pepper sauce
- 3/4 cup peanut butter
- 3/4 cream of coconut milk

In a med. size bowl, combine soy sauce, lemon juice, oil, and sugar. Add chicken cubes. Let marinate at room temp, tossing occasionally for 30 mins.

Meanwhile, in a food processor, combine garlic, shallots, lime juice, brown sugar coriander, and hot pepper. Process until garlic and shallots are finely chopped. Add peanut butter and coconut milk. Process until smooth.

Thread chicken on 10 inch wooden picks or skewers. Grill over direct medium-high heat for 10 mins., until tender and opaque. Bast with peanut butter sauce. Serve remaining sauce for dipping.
