  • olive oil.1c.onion chopped.1c.carrot minced.1c.celery minced.2lb ground lamb.1c.red wine.1/2 lb.prosciutto.minced.6c.canned.imported plum tomatoes.chopped.2c.beef broth.4 toes garlic minced.

directions

in a lg pot.over med. heat.add oil,saute onion,carrot,celery,garlic.til soft and light golden.add lamb,prosciutto.til rich golden brown.add the wine,deglasing the pot with a wooden spoon.cook til liquid is thick{almost evaporated}.add the chopped tomatoes,their juices,and the broth.once liquid begins to bubble reduce to low temp.cover cook for 2 hrs.stirring every 15 min.sauce will be medium thick consistancy.toss with pasta.top with grated locateli,and a sprig of mint.
