Rhubarb Bread
Rhubarb is a conversation piece in our household. We have the plants placed on the property lines and we talk to our family members and gives us some time to talk the day. This is a wholesome bread that is good and fun to make.
ingredients
- 1 1/2 cups brown sugar
- 3/4 cup vegetable oil
- 1 egg
- 2 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 1/2 cups chopped rhubarb
- 1/2 cup walnuts or pecans.
- 1 cup buttermilk
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 sugar
- 1 tablespoon butter

1. Preheat oven to 325 degrees F. Grease two 9x5 loaf pans.

2. In a medium bowl, mix brown sugar, oil and egg together; add flour, milk, salt, baking soda, cinnamon, and vanilla. Fold in rhubarb and nuts. Combine sugar and butter and glaze over top of loaves. Bake for one hour.
