Spicy Carrot Cake
ingredients
- 2 cups flour
- 2 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon ground nutmeg
- 3 cups finely shredded carrots
- 1 cup cooking oil
- 4 eggs
- 1 cup flaked coconut (optional)
- cream cheese frosting

1. Preheat oven to 350°. Grease and lightly flour a 13x9x2 baking pan; set aside.

2. In a large mixing bowl combine flour, sugar, baking soda, baking powder, and cinnamon. Add carrots, oil and eggs. Beat with an electric mixer til combined. Pour batter into prepared pan.

3. Bake for 35-40 minutes or til wooden pick comes out clean. Cool thoroughly and frost. Store in refrigerator.
