Carol's bean and macadamia salad
ingredients
- Stringless green beans.
- Orange
- Macadamias – roughly chopped
- Persian fetta – crumbled, and some of the oily dressing the fetta comes in

Top and tail beans and lightly steam or microwave so they are still crunchy. Strain and set aside to cool.

Peel orange and cut segments from between the membranes – do this over a bowl to catch all the juice.

Add orange segments, orange juice, macadamias, fetta, and a small amount of the fetta’s oil marinade to the beans. Toss to combine and serve!
