Carol's bean and macadamia salad

  • Stringless green beans.

  • Orange

  • Macadamias – roughly chopped

  • Persian fetta – crumbled, and some of the oily dressing the fetta comes in

  • Top and tail beans and lightly steam or microwave so they are still crunchy. Strain and set aside to cool.

  • Peel orange and cut segments from between the membranes – do this over a bowl to catch all the juice.

  • Add orange segments, orange juice, macadamias, fetta, and a small amount of the fetta’s oil marinade to the beans. Toss to combine and serve!
