Loaded Baked Potatoes
These potatoes are amazing and they are great when used for Loaded Baked Potato Soup!
ingredients
- 4 large baking potatoes
- 1/2 cup 1% milk
- 1/3 cup softened cream cheese
- 1/2 cup feta cheese
- 2 Tbls fresh oregano
- 1/2 teas salt
- 1/2 teas pepper
- 1/4 cup chopped green onions
- 6 slices bacon (cooked and crumbled)

Preheat oven to 400°. Bake potatoes until tender, let cool a bit, slice lengthwise, scoop out pulp and place into large bowl, leaving 1/4 inch thick shell. Mash pulp with potato masher. Add milk and cream cheese to potatoes, stir with a wisk. Add feta, oregano, salt, pepper and stir well.

Spoon mixture into shells. Place on baking sheet and bake for 15 minutes or until thoroughly heated.

Sprinkle each potato with bacon and green onions.

Freeze any leftovers to be used for soup (see recipe).
