Simple Stove Top Tamale Pie

  • 1 lb. ground beef or turkey

  • 1 can (14½ oz.) red kidney beans, un-drained

  • 1 can (8 oz.) tomato sauce

  • 1 tablespoon Chili Powder

  • 2 tablespoons California Style Minced Onion

  • ½ teaspoon Garlic Salt

  • 1 teaspoon sugar

  • 1 package (8 oz.) corn muffin mix

  • 1 cup shredded cheddar cheese

  • ¼ cup sliced green onion

  • In a large skillet, brown ground beef over medium-high heat; drain. Stir in next six (6) ingredients. Bring to boil; reduce heat, simmer 10 minutes.

  • Prepare muffin mix according to package directions. Drop small spoonfuls of muffin batter over meat mixture in skillet. Gently spread batter to cover meat mixture completely. Cover and cook 15-17 minutes or until corn bread is done.

  • Top with cheese and green onion. Cover and cook over low heat until cheese melts.
