Poor Man's Potatoes

  • 3 T Olive Oil

  • 4 Med Potatoes, sliced about ⅛" thick

  • Salt

  • 1 Clove Garlic, minced

  • 1 T Parsley

  • salt

  • Head oil in pan over medium heat. Add sliced potatoes in layers, lightly salting each layer. Turn potatoes a few times to make sure they’re all coated with the oil. Add garlic, turn heat to low, cover and braise for about 15 minutes until potatoes are almost tender. Remove lid, turn heat up to med/med-high and brown some of the potatoes. Sprinkle with parsley and serve
