Mini Cheese Cookies

ingredients

  • 1/2 pound butter
  • 1/2 pound sharp to extra sharp cheddar cheese, grated
  • 2 cups flour
  • 1/4 tsp. salt & Cayenne red pepper
  • Pecan or walnut halves, (Optional)

directions

  • 1

    Melt butter over low heat, adding cheese a little at a time until melted & smooth. Add salt & red pepper, stirring to incorporate into mixture. Add flour a little at a time until dough forms. Roll into small balls, pressed slightly with fork tongs, add nut half if desired & bake in a 325-degree oven on an un-greased cookie sheet for 10 minutes.
