Pear Upside Down Cake
A unique cake for that something different affair.
ingredients
- 2 TBSP. firmly packed brown sugar
- 2 TBSP. melted butter
- 2 medium pears, peeled, cored & sliced
- 3 eggs, separated
- 1/2-cup sugar
- 1 cup plain, all purpose flour
- 1 tsp. baking powder
- 1 tsp. cinnamon, ground
- 1/4 tsp. ginger, ground
- 1/8 tsp. Nutmeg, ground
- 1/3-cup whole milk
- 1 tsp. grated lemon rind
- 1 tsp. real vanilla

Spray a 9-inch square baking pan with cooking spray, Line with wax paper. Combine brown sugar & butter & spread onto the bottom of the pan. Arrange the pear slices through out the bottom of the pan, in a single layer.

Beat egg yolks until thick & lemon colored. Gradually add sugar, beating well. Sift flour & baking powder, cinnamon, ginger, & nutmeg. Stir into the flour mixture the milk, lemon rind & vanilla flavoring.

Beat egg whites until stiff & fold into the flour mixture. Spread over the pear slices, evenly. Bake in a 350-degree oven for 30 minutes or until tooth pick inserted in the center comes out clean. Cool for several minutes & invert onto a plate.
