Spanish Chicken and Rice
ingredients
- 2/3 cups frozen green peas
- 1/2 cup celery
- 1/2 medium red pepper
- 1/2 medium yellow pepper
- 1/8 teaspoon chili powder
- 1/2 teaspoon ground tumeric
- 5 1/2 ounces uncooked wild rice
- 14 1/2 ounces canned diced tomatoes
- 2 cups water
- 1 pound boneless, skinless chicken breasts
- 2 medium onions
- 1 medium garlic cloves

Spray a large nonstick frying pan with cooking spray, heat, then brown garlic, onion, and chicken.

Add water, tomatoes, rice, tumeric, and chili powder. Cover and simmer 10 minutes.

Add peppers and celery and simmer 10 minutes more, stirring occasionally. Add peas and simmer until rice and peas are tender, 5 to 10 minutes. Adjust liquid if necessary.
