This was Grandma Flowers’ favorite recipe from her Eastern Star Recipe book dating back to the early 1950s from Morenci, AZ.

ingredients

  • 1/2 C shortening
  • 1 C sugar
  • 2 eggs
  • 3 mashed bananas
  • 2 C flour (you can use white whole wheat also)
  • 1 tsp soda
  • 1 pinch of salt
  • Optional: 1/2 C chopped nuts (walnuts or pecans)

    Cream shortening and sugar, add egg and beat well. Add mashed bananas. Mix all dry ingredients together (nuts included but optional) and add a bit at a time to the banana mixture.

    Bake at 375 degrees F for 30-35 minutes or until a toothpick comes out clean.

notes

My mother would freeze bananas that had darkened for use in this banana bread. Sometimes she would make it from white whole wheat flour and add flax seed (whole and ground) for extra nutrition.
