Grandma Katherine's Famous Potato Soup
This is a wonderful, hearty soup for a cold winter day. Ryan loved this when he was growing up. No one made it as good as Grandma Katherine
ingredients
- 6 or so potatos (depending on how much you want to make and the size of the pot)
- 4 cans of beef broth
- 1 package of dry Lipton soup with 4 cans of water
- 2-4 tablespoons of flour
- small dab of butter
- sour cream for topping
directions

Cut potatoes in cubes. Cook in water as if you were going to make mashed potatoes. When done, drain the water off and add broth, Lipton soup and water. Bring to a boil.

In a separate skillet brown the flour in a small amount of butter until it is toasty brown and smells slightly burnt. Add a bit of liquid from the pot and make a roux. Add roux to the potato pot and stir to prevent lumping. When done, serve in bowls with a drop of sour cream on the top.

The browned flour is what gives this potato soup its rich flavor.
