Mom's Easy Beef Vegetable Soup

This is a quick and easy soup for a cold winter day

  • 2 pounds of very lean ground round beef

  • 1 package dry Lipton soup

  • 4 cups water

  • 4 cans of beef broth

  • 4 cups water

  • 1 large can of crushed tomatos

  • 1 pound frozen mixed vegetables

  • 1 cup rice

  • Mix all ingredients together except rice and bring to a boil. Reduce heat and simmer for 20 minutes. Add 1 cup of instant or quick rice, and cook until rice is tender.

  • Serve with crackers or bread. Keeps well for a second meal.
