Company Macaroni and Cheese

Dale Reimer’s Famous Mac & Cheese

  • 2 C uncooked macaroni

  • 2 T chopped green onion

  • 1 t salt

  • ¼ t pepper

  • 3 C grated cheese (cheddar and Jack)

  • 2 C thin white sauce (recipe to follow)

  • White sauce:

  • 2 T butter or margarine

  • 1½ T flour

  • ¼ t salt

  • ¼ t pepper

  • 2 C milk

  • Melt butter in saucepan over low heat. Blend in flour, salt & pepper with wire whisk. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk and heat to boiling stirring constantly. Boil and stir 1 minute. Remove from heat.

  • Preheat oven to 375 degrees. Cook macaroni as directed on the package. Place half the macaroni in ungreased 2 quart cassarole baking dish. Sprinkle with half the onion, salt, pepper and cheese; then repeat. Pour white sauce over the casserole. Cover and bake for 30 minutes. Uncover and bake another 15 minutes.

  • Toast 2 large slices of bread and tear in pieces to place on top of the macaroni and cheese. Serve at once with a salad and/or vegetable.

Dale is Jan's dear friend and the first person other than Dr. McEvers to hold Ryan after birth. Dale and Jan met at the U of Arizona in Microbiology Class. Dale was a bridesmaid in Jan's wedding.
