Baked Latkes and Homemade Applesauce
ingredients
Latkes- 2 lbs potatoes, shredded
- 1 sweet onion, shredded
- 2 eggs, beaten
- salt and pepper to taste
- 1/4 cup matzo meal or potato flour
- 1/4 tsp baking powder
- 6 apples (use sweet apples like Red Delicious, Gala, Fuji and Rome, peeled and cored
- 1/2 cup water
- 1/4 cup unsweetened apple juice concentrate
- 1 1/2 tsp cinnamon (optional)
- agave nectar to taste (optional)

Preheat oven to 450 degrees. Drain excess liquid from potatoes. Mix all ingredients in a large bowl. Line two baking sheets with non-stick foil then spray with non-stick spray or spray the baking sheets directly. Add latke mix by 1/4 cup and flatten. Bake 15 minutes, turn and bake 10 minutes longer or until desired crispness. Serve with applesauce or sour cream.

Applesauce:

Cut apple in chunks or coarsely chop. Place in a large saucepan with 1/2 cup water and apple juice. Heat to boiling. Turn heat to medium-low and simmer 10-15 minutes or until the apples are soft and the consistency is what you want.
