Creole Potato Soup

This is my favorite soup in the whole intire world. You can make and eat this soup any time of the year at any season. This is a great winter soup to make for when it’s cold outside. It’s also a great comfort food. Very tasty and delicious.

ingredients

  • 1 large (2 small) chopped yellow onions
  • 2 tablespoons of chopped garlic
  • 3 tablespoons of olive oil
  • 4 large potatoes
  • 2 cups of chicken stock
  • 3 cups of cream
  • 1 cup of white wine
  • 1 teaspoon of pepper
  • 1 teaspoon of salt
  • 1 teaspoon of garlic powder
  • 2 bay leaves

    Peal and slice the potatoes. Put them in a boiling pot of water and let the boil. In a skillet, saute’ the onion(s) and garlic in the olive oil. Add the stock and bay leaves once softened. Let the mixture simmer for about 15-20 minutes. Add the salt,pepper, and garlic powder. Test the potatoes and make sure they are done. Once they are done strain them, and then add them with the mixture and let it simmer for 20-30 minutes. Then with a handheld blinder mix in the cream to the mixture. Let simmer for about 10-15 minutes, then serve.

    Freeze the left over soup. This can let it last for about one year in the freezer. Just defrost when you want to eat it.
