POT-FRIED CABBAGE

  • 1 head of Cabbage, cored and cut into chunks 1½ squares

  • ~8 slices Bacon, cut into ¼ inch slivers

  • Collard Greens, fresh or frozen, chopped

  • 2 medium Tomatoes cut in chunks

  • Cook bacon in Dutch oven or large soup pot until well done. Remove and drain bacon bits, leaving grease in pot. Stir in cabbage and turnip greens; cook until fork-tender. Add tomatoes and heat a few more minutes. Prior to serving, stir in bacon bits.
