Turkey Pasta Salad with Lemon Basil Dressing Recipe

DRESSING:- 1 cup low-fat mayonnaise
- 2 1/2 tablespoons basil leaves, fresh, chopped or 1 1/4 teaspoon dried basil
- 1 teaspoon grated lemon
- 1 1/2 teaspoon lemon juice
- 7 ounces pasta shells
- 6 slices turkey bacon, cooked crisp, crumbled (it’s easier to chop the bacon before cooking)
- 1 1/2 cups turkey (or chicken) cut into strips
- 1 1/2 cups lettuce, shredded
- 1 cup low-fat Swiss or cheddar cheese cut into small cubes
- 1 cup chopped tomato
- 1 cup peas

Cook pasta as directed on package. Rinse pasta in cold water; drain. Mix together mayonnaise, basil, lemon peel and lemon juice in a large bowl to form dressing. Add pasta, bacon (reserving 2 tbs for topping), turkey, lettuce, cheese tomato and peas to dressing.

Mix well.

Cover and refrigerate 1-2 hours to blend flavors.

Sprinkle with reserved bacon.
