HEAVENLY CHUNKY-CHEWY CHOCOLATE COOKIES
Just double it NOW! Try serving as an ice cream sandwich. Don’t overcook- these are made to be chewy.
ingredients
- 1 cup flour
- 3 Tablesppons cocoa powder
- 1/2 Teaspoon Baking soda
- pinch salt
- 4 1/2 oz dark chocolate broken into chunks
- 6 Tablespoons unsalted butter
- 2/3 cup soft brown sugar
- 2 small eggs
- 1 teaspoon pure vanilla extract
- 12 oz dark choc chips
- 2 oz white chocolate broken into pieces

Preheat oven to 350 deg F. Sift together the flour, cocoa, baking soda and salt into a bowl.

Gently melt the dark chocolate in a bowl over a pan of simmering water or in a microwave on medium power.

Cream the butter and sugar together until light and fluffy, then beat in the eggs, vanilla and melted chocolate.

Stir the chocolate chips and white chocolate chunks into the creamed mixture. Mix well then add the flour. Stir well.

Line 3-4 large baking sheets with waxed paper and place 30 heaped tablespoons of the cookie mix on the trays. Bake for 10 mins.

Cool slightly for several minutes then remove with spatula onto wire cooing rack.
notes
Best eaten same day but can be reheated in a very low oven for just 5 minutes if you like them soft and chewy
