Asian Chicken-Lettuce Wraps

ingredients

  • 1 lb chicken tenders, cut crosswise into 1-in pieces
  • 1 (10-oz) bag shredded carrots
  • 1/3 c jarred chili-garlic sauce
  • 1 bunch scallions, chopped
  • 1/2 c fresh cilantro leaves, coarsely chopped
  • 8 large Boston lettuce leaves
  • 8 lime wedges

    1. To make the filling, spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the chicken and carrots; cook, stirring occasionally, until the chicken is cooked through, 5-6 minutes. Stir in the chili sauce and scallions; cook, stirring frequently, until heated through, about 1 minute. Remove the skillet from the heat and stir in the cilantro.

    2. Place 2 lettuce leaves on each of 4 plates. Place 1/2 cup filling on each leaf, squeeze the juice from 1 lime wedge over the top of each one, and roll up. Serve at once.
