Ham and Cheese Brunch Squares

Yummy breakfast treat

  • 2 Cups graded Colby and Monterey jack cheese

  • 1 package frozen toaster has browns, thawed (10 patties

  • 8 oz cream cheese softened

  • 12 eggs

  • ½ tsp b lack pepper

  • 8 oz thickly sliced deli ham

  • 4-5 green onions about 1 cup diced

  • 3 plum tomatoes

  • Preheat the oven to 450 degrees. lightly brush a large baking dish with olive oil. grate chese. crumble hash browns over dish press gently into an even layer. sprinkle half of the cheese over the hash browns. back 13 to 15 mins until crust starts to brown and cheese is melted

  • Meanwhile in a large bowl, whisk cream cheese until smooth. gradually add eggs and black pepper, whisk until smooth. coarsely chop ham. slice green onions and reserve ¼ cup of the tops for garnish. place ham and onions into a sauce pan cook and stir over medium heat for 2-3 mins or until hot. stir ham mixture into egg mixture.

  • remove dish from oven and pour egg mixture over crust. return pan to the oven and back 6-8 mins or until center is set. Meanwhile chopp tomatos.

  • remove the dish from oven add the tomatos and reserved green onions. sprinkle on black pepper if you like. cut into squares.
